Grape variety: Melon de Bourgogne

Terroir: Clos de l’Alouette is a five-hectare walled vineyard plot that has been part of the estate since 1996. It has sandy soil on micaschist bedrock and is among the earliest ripening plots of the Sèvre et Maine area.

Winemaking methods: Every year, the grapes from the Clos de l’Alouette plot are fermented and bottled separately from our other plots. The wine is characteristic of wines grown on micaschist rock and the traditional ageing method brings out the subtlety of this terroir. Lees ageing throughout the entire winter as well as regular bâtonnage (lees stirring) encourages the wine to develop fruitiness and a structured palate.

Bottling: After six months of ageing on the fermentation lees in the traditional manner, the wine is racked off and directly bottled, in early March at the estate. After an ideal six months of rest, the wine shows its full aromatic potential.

Tasting impressions:

Appearance: Pale lemon-green colour.

Nose: Great finesse on the nose with aromas of white flowers, citrus and stones.

Palate: After a lively initial impression, the palate shows finesse with white fruit driven flavours, richness and a long-lasting, slightly lemony finish.

Suggested food pairings: Perfect served as an aperitif thanks to its aromatic finesse, but will truly excel with shellfish or freshwater fish with beurre blanc sauce.

Ageing recommendations: This wine is at its most aromatic during its first two years, but will keep for up to three years in your cellar.
